Easy Oatmeal Bake Recipe for a Week of Healthy Breakfasts

It’s simple to make, packed with wholesome ingredients, and perfect for prepping ahead—just one bake and you’ve got breakfast covered for the whole week. Whether you’re feeding a family or just trying to streamline your mornings, this baked oatmeal is a no-fuss, delicious solution (and you may already have everything you need!)

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 scoop vanilla or unflavored protein powder (optional)
  • 2 large eggs
  • 2 cups milk
  • 1 tsp vanilla extract
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsalted butter, melted
  • 1 medium apple, cored and diced or 1 cup blueberries

Instructions

Preheat the oven to 325°F and butter a 9 inch baking dish

In a medium bowl, combine oats, baking powder, cinnamon, nutmeg, salt and protein powder (if using). Mix well.

In another medium bowl, whisk eggs, then add milk, vanilla and maple syrup. Whisk to combine.

Add the milk mixture to the oats, along with the melted butter. Mix well.

Pour the oatmeal mixture onto the prepared baking dish and top with apples or blueberries. Bake until the top is golden and the oats are set, about 50-60 minutes. The mixture should not move when you pull out the pan.

Let the oats cool for 10 minutes and serve hot. This dish stays in the fridge for about 5 days and can be reheated or eaten cold with a scoop of yogurt and a drizzle of honey. Enjoy!

  2. Besides cutting fruit — which can be avoided with berries — This recipe is brief! Like putting clothes in the dryer 😁. I substituted flax egg and milk (homemade) to make this recipe vegan and poured the mixture over some pears. I like cardamom too. This dish brought inspiration to my kitchen and palate 🤩 thank you Ester!
